Jackrabbit are tough, stingy, and gamey as hell. If you can find one less than a year old you might stomach it.

brisket is tough when its cooked poorly too - IMO if theres plenty of rosemary, garlic, olive oil and a patient hand at the oven, you can make a shoe taste good.....we eat tripe in our family....on its own it is nasty and smelly - boil it for 4 hrs in diluted vinegar (windows open) and then a tomato sauce for 10 hrs and you have a piece of heaven
