This is my mother's recipe she left to me before she passed.

Clam Chowder

6 or 7 Potatoes
1 Onion
2 Cans CHOPPED Clams saving the juice
4 TBSP Flour
1 Can Evaporated Milk
4 or 5 Slices of Bacon
1 1/2 Stalks of Celery
Salt and Pepper
Dice potatoes, celery, onion and cover with water, cook until done.
Add clams
Mix flour with clam juice, add to thicken.
Fry bacon, crumble and add with bacon grease.
Add canned milk, salt and pepper to taste

This is a small recipe as you can see but very tasty. I've found that mashing some of the diced potatoes make it thicker.

My better half is lactose intolerant but loves clam chowder. It often messes her up when she has it.

I started getting whole lactose milk and reducing it. I substitute that for evaporated milk or cream. To make the thickening roux, I add flour to the bacon grease and then add a small bottle of clam juice to it gradually. Other than that my recipe is similar to yours.
