You can just cut the stalk off somewhere below where the seed pods start once it has dried. It’ll be fairly self explanatory once they start drying. You can also harvest the root, but my experience has been that it becomes a bit pithy since it is sending its energy up to produce seed. Perhaps it would still be pretty decent for pickled diakon. Thank you both for informing me.

I never researched their growing cycles, etc because I think I must have thought that they would never grow! But they did! I love daikon, but now that they have bolted, I’ll just let them do their seed thing so I can follow the cycle through. I’ll be really interested to see how big they got in their pot. They may have been cramped up. Or not! LOL! I don’t know what I’ll find, but it’ll be an adventure to find out!
