You are so wonderful to cook for that family! I used to make pasta e fagiole w/chickpeas, onion, garlic, olive oil and parmesan cheese among other things, and it was really good. I bet yours is better.

The Chickpea Dish started out as a Weight Watchers recipe, so it has a lot of vegetables in it. Today’s version had a couple of colored bell peppers in it (from Walmart) as well as some Anaheim chilis from the garden. And fresh basil.
