Bulgaria has just about the world luxury market in hand with MARE’S MILK. We buy a chunk every now and then at an Afghan or Arab store around close. It’s EXPENSIVE but actually really, really good cheese.

Maybe when it comes to Bulgaria, when it comes to earthy peasant cheeses, they are a cheese making superpower. Give credit to communism.... It held them back so you have better rural cheese traditions there. I have a feeling that rural Bulgaria is swarming with sheep and goats. Cows not so much

Cheese.

I found out I have many food sensitivities last March.
Cow’s milk (and even goat’s milk) and anything made with it are off limits.

Good news is, I started to really feel great within a week of eliminating my allergic foods, and I’ve easily lost 25 pounds since March.

Bad news is, although I live in the land of cheese (WI) and love the stuff, I can’t have any!

Enjoy your cheese, you cheese lovers!

(this means I have not even had pizza since February!)

(or lasagne!)

(now I really miss cheese...)

But I am back to being the same size as I was in high school 30 years ago, so WOO HOO!

Do you know for a fact that Cabot *produces cheeses* especially for competitions, or is that just an assumption?

When you buy Cabot cheese you are buying the best mass marked Cheddar cheese in the USA. And you are supporting small dairy farmers and traditions that are slipping away elsewhere, in this once great nation. :)

How consistent has their product been for you? Maytag is just across the river from me and they have a good reputation here. I tried their blue a couple of times and was not impressed. I got some for Christmas this year and it was very good. Moderately sharp and good veining. Hope the earlier experiences were flukes.

In my experience it’s been very consistent. We usually get it a Whole Foods and I always ask for a taste before we buy. They’re happy to do it. I know some here don’t care for Whole Foods but we usually only go there when we have a serious jones for some good cheese.

So my advice would be don’t buy it anywhere they won’t give you a bit to taste for yourself.
