Just when you yeast expect it

I had thought you formed the pocket before baking them with two flat rolled out dough pieces. I got so frustrated I gave up and used the flat dough to make Flatbread to at least have something to eat!

Much to my astonishment they started popping with steam inside, pushing the pocket open like little footballs!

Presto! Pita breads.

And yes I'm sure there is a YouTube video on it, but I like to at least try on my own most always.
