I get a craving for it once in a while. I am especially fond of Spam sandwiches. I take Spam, slice it, fry in a cast iron skillet, place the slices on bread (with Mayonnaise), lay a slice of cheese (usually Swiss or Cheddar) atop the Spam, and add a few slices of avocado atop the cheese.

Fried to a crisp with melted American cheese and mayo....YUM!
..................................add a touch of mustard to the mayo and not fried quite to a crisp. Great sandwich material during WWII. I’ve taken it many times with me in a duck blind or on a hunting field along with a chunk of cheese and an apple.
