We had high winds here last night and this morning three of my large papaya plants were laying flat on the ground. I chopped the stems and put the leaves into compost but I now have 150 - 200 pounds of papaya that are to green to ripen indoors. Does anyone have a favorite recipe that would use these or do they just get thrown out (BTW I am allergic to Papaya, I grow them for the wife, and grandkids)

My wife knows a green papaya salad recipe, that may or may not be the same as the Thai recipes mentioned already. What I know for sure is that it uses vinegar to preserve the ingredients for a good long time. She is from the Philippines, so look for the recipe from a list of Philippine recipes.
I go to a Filipino church. I had one of the ladies come and take them She’ll make pickles or something for Sunday lunch
yes, she cooks a lot... but I really only like N Indian food... S is mostly veg :)
but she does enjoy bacon, and the occasional steak :)
