An old white guy I know told me of a similar way to make elderberry wine.
You put the wild berries and some sugar in a jar, and stretch a rubber glove over the opening.
The gases make the glove stand up and “wave” at you.
When the glove collapses, the fermentation process is done, and you’ve got some mighty potent wine.
