Thank you. That sounds really good. I will try it. I gave most of the chickpeas away. Will pass along the idea of using them instead of refried beans, too.
Thank you for that information, and please forgive me for not responding sooner. My husband passed away in January, and I’m not sure if I’m going or coming. As he would have said, I don’t know if I’m batting or catching.
My husband’s favorite soup is Pig ‘n Pepper Potato Soup. I found this recipe on the internet years ago.
6 c. potatoes
1 c. celery, chopped
1 c. onion, chopped
1 lb. polish sausage, cut into bite size pieces
1 tbsp. salt
1 1/2 tsp. coarse ground pepper
1 tbsp. dried parsley
3 c. water
2 c. milk
1 c. half & half
2 tbsp. butter
3 tbsp. flour
Boil potatoes, celery, onion, sausage, salt, pepper, parsley, and water until potatoes are cooked. Add milk and half & half. Melt butter and mix with flour. Add to soup and cook until thickened.
I gave this recipe to a friend, and she sometimes uses fried country sausage instead of Polish sausage.
We were recently given several bags of blackeyed peas and bags of chickpeas. This is not something that I have ever cooked or eaten. Do I cook them just like beans with at little ham? Does anyone have good recipes for these?
