Luke was Peters scribe. Peter was at that time not a literate man, and what Luke did was to place Peters words in writing to preserve them, thus it is really the Gospel according to Peter. I believe you have it backwards. Luke accompanied Paul, who was very educated. John/Mark was the one that accompanied Peter. But there is also a separate Gospel of Peter, which is non-canonical, just like quite a few other writings.
