If that's all it is, then how can Paul say that to profane it is to be guilty of the body and blood of the Lord?

Also, please explain to me why Christ would replace one set of symbols (the old covenant) with a new set of symbols?

He didn't. He replaced symbol with reality.

Now, using scripture, please explain how, instead of being risen and ascended, he is still on Earth.

Well, that's pretty easy, isn't it? He's God. God does neat stuff like causing his glorified, resurrected human nature to pass through doors, and causing it to be in more than one place at the same time.

Surely you can do better than a "village atheist" objection like that.

What symbols are being replaced or not replaced? Please post the relevant scripture.

Yep. God can do anything. Doesn’t mean he instituted a magical ceremony.
