Low-carb Breading

• 3 oz. bag of pork rinds, crushed
• 2 eggs, beaten
• 1 tsp. poultry seasoning or Old Bay seasoning
• 1/2 tsp. pepper


1) Coat chicken with egg.
2) Mix other ingredients.
3) Roll chicken in mixture to coat it.
Pan fry chicken in butter or olive oil.

Sausage and Cheddar Breakfast Casserole

• 1/2 lb. sausage
• 1/2 c. chopped onion
• 1/2 tsp. salt
• 1/4 tsp. garlic powder
• 12 eggs
• 1/4 c. chopped green pepper
• 1/4 tsp. pepper
• 1/2 c. shredded cheddar cheese


1) Brown sausage.
2) Beat eggs and add other ingredients to eggs.  Mix in sausage and cheese.
3) Spoon into a casserole dish or muffin cups.
Bake at 350o until a knife inserted in the center comes out clean.

I think I am going to pass on the pork skins breading recipe Carlo. LOL If you say its good I'm sure it is..... but......... it sounds icky.
