Because the States don't put religion on the birth certificate. Some have other information, though - Vlad's North Carolina one includes my husband's and my State of birth and birth date.

I've never seen a U.S. birth certificate that lists religion. Nor should they. It's irrelevant to the purpose of a birth certificate.
