So, if China’s embassy was supporting the Serbs how is that any different from U.S. who are sopporting the Albanian Rebels in Kosovo against the legitemite Serbian Government.

It's different in two ways.
Firstly, the US was not breaking international law by using its embassy as a military asset against Serbia.
Second, the US recognition of the new nation of Kosovo is not a military action, but a diplomatic one.
