Some of his best -
I always keep a supply of stimulant handy in case I see a snake, which I also keep handy.
Always carry a flagon of whiskey in case of snakebite and furthermore always carry a small snake.
I never drink water because of the disgusting things that fish do in it.
I never drink water; that is the stuff that rusts pipes.
I never drink water. I’m afraid it will become habit-forming.
I cook with wine, sometimes I even add it to the food.
Isn’t that from “Unforgiven”?
Fields is a national treasure : )
In "Legends of the Fall" in the very last scene, when Tristan is fighting with the Wild Bear, and loses the fight.
"One Stab" the Indian narrates slowly.. "It was a good death"..

Q: "Why do you do it? Why do you defend him?"
A: "Because he walks on the wall. He stands guard over us while we're sleeping and says 'Nobody is going to hurt you. Not tonight. Not on my watch.'"
I don't recall the movie, but here's another one:
Q: "Is it true that God always answers prayers?"
A: "Yes. But sometimes the answer is 'No.'"
Second the nomination. Whatever hack was responsible for that outrage should be writing fortune cookies or Hallmark Cards.
Bruce (Jim Carrey), after losing Faith, his great love, for being arrogant, says to God (Morgan Freeman): "How do you get someone to love you without violating free will?"
God: "Welcome to my world, son."
Thanks.
"Ephialtes, may you live forever."
How about the scene where the "god emperor Xerxes" comes to Thermopylae and tells Leonidas that he has done well that day, but that tomorrow, the Persians will unleash their "Immortals." Leonidas replies, "So? From what I've seen, we should have marched our women up here. We'll test your Immortals and see if they live up to their name."
There are too many good lines in that movie to pick only one ...
And of course there's the classic:
Xerxes: "My archers will blot out the sun with their arrows."
Leonidas' captain: "Then we will fight in the shade."
Unforgiven.
How about the quote of the queen in 300.
She hands the traitor back his own words he used when he raped her, (as she stabs him in the guts in front of the other politicians he was telling the war was unneeded.)
something like, “I am not your queen, I will not enjoy this...” as she twists the knife and falls to the floor and the bribe money spilling out.
