Maybe not. Take for example a boning knife you have in your kitchen, or a knife you use on a regular basis to cut through meat containing bones. Look at the tips of them, they can still be nice and pointy, even after years of use.
If the murderer used slashing blows for the majority of the attack and have few stabbing blows, there is the possibility the knife never contacted bone of had limited contact, preserving the blade.
Normally, microscopic pieces of metal come off a knife and are lodged in the bones. I'm running scenarios through my head to try and figure out what type of evidence the police would have in order to even get an arrest warrant for this crime.
I'd hate to think a priest would be capable of murder.
