But, I'm not going to forego seeing X-2 or Hulk over the next month because they aren't "spiritually uplifting."

Well yeah, I'm far from perfect on this...I've already seen X2. :-)

But what got me thinking about this was a question I read somewhere: Who exactly would consider sex and violence entertainment?

I agree, sex and violence in and of themselves are not entertaining. However, they can be part of a good, larger story. I'm a superhero film fan, and in addition to wanting to see X2 and Hulk, I was a big fan of the original Superman flick. That film, while overall very benign did have violence thrown in. It didn't glorify it or anything, but it was part of the narrative (megalomaniacal supervillian tries to blow up half of California in a real estate scam, how much more violent can you get?). Now, on the same superhero bent, I loathed Batman Returns. That was just an ugly movie that made you feel kinda uneasy and dirty after watching it. It had an ugly violence and sexuality to it, you know, like in a bad way. Same thing for Hannibal. I had to take a shower after that movie.

Sex and violence are part of some of man's greatest literary and artistic works (imagine Shakespeare plays without the violence or Hemingway without the sexual undertones). I don't find gratuitous use of sex and violence entertaining, but I'm not willing to say that no sex and violence has a place in entertainment.
