To the best of my knowledge the Sub-Diaconate still exists in traditional Orders/Societies. In order to have a Solemn High Mass in the Tridentine Missae, you need a Celebrant, Deacon & Sub-Deacon, MC, Thurifer & two Acolytes. The only exception I am aware to this is the Dominican's may have a Solemn High Mass with only a Celebrant, Deacon & 'straw' sub-deacon. This is via an Indult provided to the Dominican's because the Liturgy they used could be shown to have existed & in use 200 years prior to the Council of Trent.
A Missa Cantata is a Sung Mass, typically with only a Celebrant, Master of Ceremonies, Thurifer & two Acolytes. If you attend most traditional Masses on a Sunday or Holy Day this is what you would see.
