Get series about HEALTHY, and LOW CARB FOOD
This, and future threads, will attempt to answer some of your questions and requests regarding HEALTHY food in general, and LOW CARB, LOW CALORIE diets and recipes in particular. With my background as a Master Chef, and Natural Foods Sexonutritionist, aka SexyChef (/dreamer) Bwhahaahahahahah, it affords me a wonderful vantage point to assist in creating this forum, where everyone can contribute, exchange ideas and voice their valuable opinions. Moderating in no way qualifies me as an authority on this, or any other subject.*..heheheh ..that has never inhibited me before.. blush

There are many other FReepers, (you know who you are.. LOL) on this amazing site that have a great deal more detailed knowledge and information on specific topics, that will no doubt emerge. Sooooooo, lets get started..

How do you slice the lasagna, the long way?
Doesn't sound too low carb with all those ground tomatos... if theres a trader joes near you, they have low carb tomato sauce now. also, ricotta isn't hard cheese, so it has a bunch of carbs. Sounds interesting though... I'm sure to try it.

Hi, carlo! We went off Atkins over the holidays but are back on it now so I am grateful for your recipes!
Also, for anyone interested, TGIF (Friday's) now has a whole section of Atkins-approved dishes with carb counts attached. I had the garlic chicken with steamed veggies and it was delicious. (Only 6 carbs, as well.)

Doesn't sound too low carb with all those ground tomatos... Ha! OK, OK this is not utopia, but if you are now on maintenance, this is well within the guidelines, especially if you fudge on the guidelines.. LOLOL
LowCarb Fudgy Chocolate CakeYes, it's flourless.. :)
- 1/2 cup water
- 1/4 teaspoon salt
- 1 cup Splenda
- 8 ounces unsweetened chocolate
- 1 cup unsalted butter
- 6 eggs
- boiling water
Preheat oven to 300°F. Grease one 10 inch round cake pan and set aside.
1) Using a small saucepan over medium heat, combine the water, salt and Splenda. Stir until completely dissolved, set aside.
2) Choosing the top half of a double boiler or in microwave, melt the chocolate.
3) Pour the chocolate into the bowl of an electric mixer.
4) Cut the butter into pieces and beat the butter into the chocolate, one piece at a time. Beat in the sweetened water.
5) Slowly beat in the eggs, doing one at a time. Pour the batter into the prepared pan. Have a pan larger than the cake pan ready, put the cake pan in the larger pan and fill the pan with boiling water halfway up the sides of the cake pan.
Bake cake in the water bath at 300°F for 45 minutes.
NOTE: The center will still look wet. Chill cake overnight in the pan.
To unmold, dip the bottom of the cake pan in hot water for 10 seconds and invert onto a serving plate.
Serves 10, at about 4 grams per serving, after fiber reduction.

a new dish to look forward to..You said a mouth full.. Keep your menu varied, interesting, different and if you can eat it.. keep it spicy..
Spicy Indian Salmon Fillets
- 1 tsp ground cumin
- 1/8 tsp ground cloves
- 1 tsp ground coriander
- 4 6 oz skinless salmon fillets (about 1 1/4" thick)
- 1/2 tsp ground turmeric
- 1/2 tsp dried thyme
- 1/2 tsp salt
- 1/2 tsp fennel seeds, crushed
- 1 tsp olive oil
- 1/2 tsp black pepper
- 1/4 cup plain fat-free yogurt
- 1/4 tsp ground cinnamon
- lemon wedges
Preheat oven to 400 degrees.
1) Combine the first eight ingredients in a shallow dish.
2) Sprinkle the fillets with salt; then dredge them in the spice mixture.
3) Heat the oil in a large cast iron frying pan over med-high heat. Add the fillets and cook for 5 min. or until
browned. Turn the fillets over and place the fry pan in the oven and continue cooking for 10 min. or until the fillets flake easily.
Carefull not to overcook!
You could serve with yogurt (YUCK, GAG.. :o) ) and lemon slices. Serves 4-6

The best La.egg.na I ever had WAS:
all prepared BUT was put in the FRIG. for 24 hours BEFORE
