Get series about HEALTHY, and LOW CARB FOOD
This, and future threads, will attempt to answer some of your questions and requests regarding HEALTHY food in general, and LOW CARB, LOW CALORIE diets and recipes in particular. With my background as a Master Chef, and Natural Foods Sexonutritionist, aka SexyChef (/dreamer) Bwhahaahahahahah, it affords me a wonderful vantage point to assist in creating this forum, where everyone can contribute, exchange ideas and voice their valuable opinions. Moderating in no way qualifies me as an authority on this, or any other subject.*..heheheh ..that has never inhibited me before.. blush

There are many other FReepers, (you know who you are.. LOL) on this amazing site that have a great deal more detailed knowledge and information on specific topics, that will no doubt emerge. Sooooooo, lets get started..

I like the South Beach Diet book myself. It was easy. As to those of us who msut have dessert, I'm a dedicated Carbolite fan (yogurt . but you can only get it at a frozen yogurt shop). I put roasted chopped almonds on it and sometimes just have that for lunch....also sugar free fudgesicles.

The Iron Supplement Alert merits repeating. My first batch of multivitamins contained iron supplements (100% of RDA). This was in addition to all the meat I was eating. That was a recipe for disaster. I have since switched to a multivitamin with no iron.

I've heard good things about the South Beach diet. I'm not as familiar with it as Atkins. Whatever method one chooses, if you're not satisfied with the plan or the results, you're going to fail. Best to pick one that fits your lifestyle, your energy and nutritional needs and you can stick with for the long term.

Get Dr. Atkins book and READ IT!No matter what program you choose, READ IT. Don't assume that you understand the program unless your follow it completely. Knowing about water consumption, potassium depletion, icon consumption, etc. are all terribly important not only for your weight loss but your general health.
Not all diets work for everyone. If you feel better and are losing weight, it's probably good. But be informed!
Get a blood test before you start on one of these diets, create a baseline.
I went lo-carb in July of 1998. I lost 20 lbs., felt better than I had in 20 years, chronic fatigue disappeared, increase stamina (could exercise more), decrease PMS (no water gain and backaches), sugar cravings disappeared, sugar highs and lows disappeared, rarely think about food anymore. Eat lots of veggies with proteins, some fruit. Had surgery in December 1999 and recovered in record time (half the time of my sister who'd had similar surgery) because I was so healthy. (Unfortunately, woke up from surgery to face nothing but carbs.)
I haven't been too dedicated to it lately, but have not regained the weight. This thread is inspiring me to get back on the bandwagon and start losing again (before winter hibernation!)
Carlo said once that Atkin's followings are vehement in their support of lo-carb. Perhaps it's the visceral reaction to the hoax of lo-fat (meaning super-hi carb) perpetuated on the public for the last 30 years (remember the pyramid chart). Gee, couldn't be the grain and pharmaceuticals who've stuffed us with junk food and diet pills and anti-depressants!
Anyway, diet safe and be informed!

I can attest to problems with supplements. B vitamins can be very irritating to the intestinal tract. I thought I was making myself healthier but instead I had to make several trips to the doctor. Needless to say, the only thing more healthy was my drs.' income.

It's so EASY to get vehement about low carb v. low fat. I gained so much weight and my health has been trashed on low fat diets. There's so many obesity-related diseases and problems I have a chance to avoid now because of Atkins. My legs and feet are warmer with the better circulation; my hazy vision problems are cleared up; surgery suggested twice by doctors for a weak bladder is now unnecessary; deeper sleep means nerves and muscles can heal better (not as painful as they were) from daily wear-n-tear, not to mention sleeping meds are no longer needed; no more sugar spikes and crashes which hopefully means my pancreas is getting a break; and I'm sure I'm dodging the bullet where diabetes, hypertension, etc., etc., is concerned.
Losing weight means being able to get more active and aid in the healing of this ol' bod - a major bonus. I have my goals out there: I hit 145# and I will slurge on a new kayak. I hit 130#, half of where I started, and by golly, I will have earned myself a motorcycle! But better than any toys as rewards will be having a stronger, healthier body again. That is the MAIN goal!
So when someone tries to tell me Atkins isn't good for my health, I tend to get a little testy. For the last 15+ years, low- and no-fat diets have done nothing but sabatoged my health. The government's Food Pyramid be damned!

I couldn't agree with you more. I fortunately never had any major health problems other than fatigue and being slightly anemic, but all I did was gain weight on low-fat diets. I would eat a meal and still not be satisfied even though I was full. Or an hour later be starving as my blood sugar fluctuated. Not enough protein, which I need. The Atkin haters tell us about the dangers of too much protein, but the problem is that the low-fat diet does not give you sufficient protein. Now I'm rarely hungry and moderate portions fill me up.
I have a friend with diabetes and she is allowed about 100 g of carbs a day, which is about what I try to keep to. Still allows me a piece of chocolate.
Congratulations on your weight loss, but more important on your health gain. Enjoy the kayak!

I'm hungry for salmon and got one out of the freezer this morning. Then going through this thread for more info, I found carlo's Creamy Butter Wine Sauce. So I ran to the store for Chardonnay, cream and other stuff...oh, like chocolate for the LOWCARB Peanutty Chocolate Fudge! I don't know if I'll make the fudge tonight, probably should just hold off on that one. Maybe tomorrow night! Anywho, I'm not much of a cook yet there's a chance something will turn out as long as I have a recipe to follow.
I'm wondering if anyone is interested in adding any tips and ideas for exercise: what works, good DVD workouts, etc. I need variety to keep from getting bored and have to be careful due to arthritis in one knee and lymphedema. A friend at work got me started on Denise Austin's Fat-Burning Yoga - whew!, that one is no quiet meditation by any means! It's a hard workout but really fun! I laugh my asset off while trying to keep my balance on some of those positions! Have you tried anything like that??
