Thanksgiving Leftover Recipes--Collect Yours Now!

Post your favorite Thanksgiving leftover recipes here. Then by the time we're all getting ready to find new things to do with all those wonderful leftovers, we'll have but to look up one thread. I happen to think that conservatives are the best cooks.

I'll start off with my favorite:

Asian Turkey (or roast pork) Salad

Combine WITHOUT measuring, to taste:

Diced leftover turkey or roast pork
Mayo or miracle whip
Soy sauce
Canned or fresh pineapple if desired
Diced sweet bell pepper if desired
Canned water chestnuts if desired
Bean sprouts,"
DICED CANDIED GINGER, not optional IMHO
Other veggies you may like--sugar pea pods, diced green onion, shredded carrot, hot peppers, steamed broccoli, whatever

Chill the above mixture for a couple of hours.
Crunchy chow mein noodles--stir in to each portion at serving so they stay crisp

The diced candied ginger is so awesome. If you love ginger like I do, you will inhale this salad!

This is easy:

Layer in a greased casserole,

stuffing,turkey

then peas and top with mashed potatoes...

Over this, spread gravy.

Heat in 350 degree oven til hot!

And serve with cranberry sauce of course!

This will be my first Thanskgiving without a gall bladder. Sniffle. It's my favorite holiday, since it is the holiday which pleases everyone! and I hate to alter recipes I've adored since childhood to take out fat, but this year I have to go easy on the fat or I suffer. Waah.

then,turkey- at least the white meat- is the ticket....

You can go no- or lo-fat, don't worry!! Be careful with the gravy,tho:-))

I make very lo-fat pumpkin pies...

The easiest: BBQ Turkey Sandwiches.

dice up left over turkey, dump into a sauce pan with a bottle of store bought BBQ sauce. Heat and serve.

Take a piece of toast, add turkey slices, add tomato slice, pour on Campbells Cheddar Cheese soup.

We always have trouble getting rid of the left-over popcorn stuffing.

What is popcorn stuffing, you ask?

Put a cup of unpopped popcorn in your average size bird and suture that bad boy up. Cook at 325 until Tom Turkey blows its a** off and, bingo, you have popcorn stuffing.

You'll need some oven cleaner too.

I don't have any gall bladder recipes.

Did you usually have your's stuffed or what?

Planning on having minced turkey and spam balls in a rich alfredo sauce,perhaps over burnt toast.
(Cajun blacken'd bread for all you northerners.)

LEFT OVER DELIGHT (known as Chef's Surprise at my house!)

1 small yellow onion-finely diced

1/2 lb fresh mushrooms washed & sliced

1 tbsp each red, yellow orange & or green bell peppers,finely diced (Optional if you don't like them - it's mostly for color - frozen green peas are nice too)

1 small can Campbell's Cream of Mushroom Soup

1 small can Campbell's Cream of Chicken Soup

(you can use any cream of anything soup you like - these happen to be the ones my family likes)

2 cups left over turkey, ham, or chicken - diced

1 to 1-2 Cups Sour cream and/or heavy cream - to thin the mixture and to stretch it out if unexpected company drops in

1 Knorr bouillion cube chicken, beef or vegetable (depending on the meat you are using)

In a large skillet saute onion,bell pepper in a small amount of butter (not margerine!)add mushrooms after onions start to turn translucent. Add meat of choice until it gets warm then add soups. Add bouillion cube and sour cream or heavy cream until throughly warmed & bouillion cube has been dissolved.

Serve hot over cooked pasta, rice or chinese noodles or biscuits.

Am I the only person who hates eating turkey...anytime? Mashed potatoes, gravy, and dressing are the only edible dishes on Thanksgiving.

I remember going to use the bathroom at a certain Chinese resturant here in town and there was a half filled 35 gal. drum of MSG sitting beside the door to the kitchen. Needless to say............we checked out.

Since most ingredients are optional, I'll give my version.

2 slices of pumpernickel bread
turkey (diced optional)
sliced dressing
mayo
salt & pepper

Place mayo on bread, next stack turkey and dressing on bread. cover with 2nd slce of bread .
eat
Serve cranberry relish with.. sandwich.

Seriously, I'm going to try yours, sounds good

I line several attractive pyrex casserole dishes with dressing (recommend bread/poultry seasoning dressing). Lay slices and pieces of leftover turkey on top. Pour gravy over top and a little down the sides (don't inundate with gravy). Cover with pieces of turkey skin, fat side down. Squish glad wrap over top and poke down into sides. Wrap whole dish with heavy-duty foil. (Don't use pyrex cover). Put casseroles in large baggies...Freeze.....Will last months in the freezer.....To use, start defrosting in the fridge the night before. Heat with pyrex dish cover on, 325 degrees for as long as it takes. Discard skin and serve....I use a hot tray when serving as the casseroles have a tendency to cool quickly.....For years now, when I have Thanksgiving, I've made these casseroles weeks before the holiday. I got sick and tired of being sick and tired by the time I sat down with little appetite to eat my own Thanksgiving dinner. Serving these casseroles gives me time to prepare all kinds of nice side dishes for the feast. No mess in the kitchen before and after the meal. The skin juices seep down into the casserole while heating. Everyone loves these casseroles. I have extra gravy frozen to put out, altho in most cases, it isn't needed. You can freeze casseroles for one, two or more people depending upon your need. Just pull one out when the lust for turkey and dressing descends upon you. Try it, you'll love it!

Panckes (no syrup) covered with turkey pieces in gravy.

Actually it is very good and a great way to serve turkey for the upteenth time.

One year the day after Thanksgiving, I went to get the turkey to make some sandwiches. My son had taken the ENTIRE leftover turkey with him back to Raleigh! The whole thing! You just do NOT have leftovers with boys.
