When the police arrive, calmly give your side of the story; You were quietly eating dinner and you were targeted by the owner for no reason.
This will force the owner to go on record to the police why they're asking you to leave.
This can be used later in a court case for discrimination or targeted harassment.
It will also embarrass the restaurant.
Let the owner be shown as being unreasonable, angry, and irrational.
And of course, get video and audio.
This is a wonderful idea which unfortunately will be lost on a small, albiet noisy, segment of paralyzed GOP'ers who sit in prayer circles awaiting their next issue of The Weekly Standard.
“If this ever happens to you, Don’t leave. Remain composed and call the police.”

Personally, I would call 911. Why, because all calls are recorded and public info. Put your phone on speaker and they can hear the bigoted restaurant owner or protestor. Have your friend record the event at the same time. You’ll get local attention or better.
Calling police precinct won’t work becuse it will take some time to respond if it’s not a critical situation. Getting a police report is less useful that a 911 recorded call.
