Ghost Pepper plants are easy to grow and (for obvious reasons) quite immune from bugs and rabbits, deer, etc. When dehydrated, the peppers keep well and a VERY SMALL amount of the resulting powder will flavor a very large pot of chili!!!
Recalling your experience with canning your peppers.
Now what was that recipe again?
;>)
gives me chills.....
Actually, my ghost and habanero plants were eaten by bugs last year, while my jalapenos were untouched. I was pretty amazed that there were bugs that tough—I thought even the foliage would be immune. Florida has some tough critters!
I’ve grown them and they are not immune from Moths that like to drop their spawn on them and the baby caterpillars will drill right through the peppers without hesitation.
You also need to be careful if you use an oven to dehydrate the peppers as the resulting vapors will have an adverse effect upon anyone in the building.
That being said, I still have a couple of large Mason Jars of dehydrated Ghost Peppers and you are correct, just a small amount of the powder is very powerful. I find it has an interesting “fruity” flavor that you can enjoy for a few seconds before the burn begins.
