The savory version of a flan is a quiche.
Onion and Mushroom Quiche
For making flans, you want the freshest eggs you can get. It is very easy to tell when your eggs were packed. On the end of an egg carton you will always find at least three items. The first is the expiration date. Ignore this. You should always be using your eggs at least 2 weeks before this. The second is a number, usually preceded by the letter “P.” This identifies the egg packer. If you have problems you need to give this number to the state Health Department and/or Department of Agriculture. The third item is the one you want to pay attention to. This is a number from 001 to 366 and is the Julian date of the day the eggs were packed. Eggs are packed the day they are laid. Today is day 282. About the best I have ever been able to find is five days old. I don’t buy eggs past 12 days.
Flans are made with egg yokes. This means that you need to separate out the egg white. Whites (albumin) are high in protein but have little or no fat. The best thing you have in the kitchen to separate eggs is a slotted spoon. If you are very picky, you will want to remove the chalaza. The chalaza is composed of one or two spiral bands of tissue that suspend the yolk in the center of the white. For home use, don’t worry about this.
If you need to get a piece of shell out of your separated eggs, use another piece of shell.
Hard boiled eggs that are hard to peel are usually too fresh.
