Maybe their definition of dementia is eating white bland rubbery blocks of food and saying that it tastes good.

Genistein in soy inhibits DNA biosynthesis.

That is what gives it its anti-cancer properties.

Eating lots of soy over a period of years will cause your brain to diminish in size.

The study is flawed, because it fails to take into account that people who consume tofu are demented to begin with.
