The problem with the foil only arises when the foil actually TOUCHES the tomato sauce. That's when you'll get the nasty grey stuff and the holes eaten through the foil. If you have a high-sided pan and wrap it loosely the foil probably never touches the food (a GOOD thing).
We always have more ribs than pan, so I just put a layer of plastic wrap under the foil, and hang it WAY out one side so I remember to take it off later . . . .

Interesting about Gen. Scott having casks of vinegar on his campaigns. (General Geo. Washington insisted on having onions for his troops.)
Much better to use something like vinegar as anti-septic than these new anti-bacterial soaps that are now suspected to contribute to the problems of antibiotic-resistant germs.
I seem to recall having gotten an email once that honey is a good wound dressing, even in modern medicine it’s used as a last ditch effort to start the healing process in really tough cases where a wound won’t heal.
Of course, in using honey, one would have to be very certain that there weren't any ants in the area...
