There's every chance that it was space flight that screwed this woman up. You go up into a zero-g environment your T-cells stop functioning. When you come back down to Earth, they start with a bang.

Sometimes the "restart" is rocky and folks find out they have recessive genes that create "allergies" to all sorts of things.

This woman is not the first astronaut to get seriously ill after a trip. She won't be the last. What I don't understand is why NASA didn't arrange for appropriate medical intervention.

BTW, the obvious onset of Celiac Disease is a clue to the problem.
