Oh dear better not say what I have just put in the oven then.

I will anyway.

A fellow freeper (thanks Mystery-ak) sent me a cake mix for Spice Cake as I was fascinated that so many American recipes seem to call for cake mixes whereas in Britain you either make from scratch or use a mix (not many people use a mix as many of them would not even bother to do that by just buy a cake and our mixes are awful).

I was intrigued that so many freepers also said they used cake mixes so she and several other freepers have sent me a few packets.

I go into this to clarify why I am using a mix after my post on instant things earlier.

Anyway I have made the spice cake mix adding some pecans and then I will make a butter cream to go in the middle of the layers.

By the way your mixes are better than ours and also make more mixture I had to buy a roasting tin to cook it in as none of my cake tins were big enough.

You'll enjoy it! That's one thing I noticed in Denmark too when I was over there, every recipe was made from scratch.

Next time insert a pudding mix or sour cream as well... excellent for moisture.


I use a basic spice recipe to build on for carrot cake of course. Sometimes I make the spice cake and puncture... inserting a bourbon glaze (the type you would make for bread pudding).

That's just my Frankenstein kitchen mind you.
