Yet, simply because the models shift south, the NHC shifts their track south....without any synoptic reasoning or anything.....just "well, the models changed, so like lemmings.....we will, too."

Most of those tracks are already south of where she is actually going.
They are simply wrong.
This may hit northern Mexico instead of Texas, but unless Emily turns to the south at the last minute, she will not hit central or southern Mexico. It simply won't happen.

track was a smidge too far south according to the sat overlay, but close. She has been tracking slightly to the north of the official track.

Emily is a small but powerful hurricane right now. Since she won't encounter any resistance and will be above very hot waters, is there a possibility/probability that she will grow larger in size? What factors would be necessary for that to happen? A slower forward motion?

You have probably seen this one from Ramsdis.
Click the Emily sat pic on the top left for an interesting and fast loading loop. Nice closeups of the eye.
At 1st I thought it was showing Emily as stationary, but you can see Jamacia moving past above the eye.

An hour ago winds were up to 155 with gusts to 185.
Central pressure is dropping fairly rapidly.
