Fluffy Butter Elect Bush Frosting

Ingredients:
4 T. Butter
1 1/2 C. confectioner's sugar
2 egg whites

Instructions:
Cream the butter until light. Gradually add 1/2 cup of sugar; set aside. Beat the egg whites until foamy, slowly add the remaining cup of sugar and continue to beat until stiff. Combine the two mixtures and blend. Add more sugar if necessary to make the frosting thick enough to spread. You will have enough to fill and frost an 8 or 9 inch 2-layer cake.

I used this recipe with Steel's Powdered Nature Sweet, Multitol Sugarfree Sweetener to frost an Applesauce cake and it turned out real good. I think it would be a good filler for puff pastry as well. It is 2g per teaspoon

Dubya, I'm happy to know that you are an Atkins dieter too. I am amazed that so many knock the diet when they haven't read the book and the research on it. It is backed by very extensive scientific research and years of clinical cases. The health benefits are nothing short of a miracle. I'm so happy to be free of the "carb craving" that never seemed to be satisfied. Now I can stand right over a Coconut Cream Pie and not even be tempted. I look and feel better than I have in years. My "fuzzy" brain has cleared up. I had attributed it to age, but I find that I am remembering things a lot better. My doctor (who recommended the diet) says we will wait until July to check my colesterol again. It was checked during the first week I started the diet and it was 307. We will see in July how much it has come down. I had some other age related problems that have cleared up also. NOBODY can tell me it's a bad diet.

I can't believe how well I am doing on this diet. It is not a diet for me, its a new way of life. I will do this the rest of my life. I have been on it at least 3 years, maybe more.

I first got on it because of my heart. My check ups are great, the lab report came in for this year, the lab tech wrote a note about how good I checked on everything.

My energy is fantastic, I am alert as can be, work everyday, and play most of the night.

At my age thats really something. I feel 21.

All my friends about my age can not believe how well I am. One friend 10 years younger than me that I haven't seen in a long while called me about finding a place for his daughter to live made a comet that he wished he was in as good as shape as I am. Thats makes me feel good.

On the other side Nan, my wife Eve just received a lab report that she has a mass, she goes for more test Feb 5. If you don't mind please pray that it is benign.
We will be married 50 years this year. Eve was 15 and I was 18 when we got married.

Funny that you mention him, I really enjoy that young Chef.. he knows his stuff and is true to the art of cooking.. Only a few of the featured Chef's on TV are really natural chefs.. He ranks at the top of the newcomers.. :)

Tyler Florence is the best guy on FoodTV. Great stage prescence and rapport with all his guests. Plus he as far as I can tell he knows what he's doing. A big plus is he has a masculine presence like Emeril. But Emeril has too much razz a ma tazz, I'm sick of him.

 IRON Supplement ALERT
Supplementing Vitamins, and nutriants.. not always a good idea!

“…supplementary iron can be dangerously toxic if you don’t need it. The body can not eliminate iron except through blood loss. Other than women who menstruate heavily, healthy people should not take iron supplements. Iron is an oxidizing agent – the sort of thing antioxidants protect us from – and too much of it can promote unhealthy changes in cells, increasing risk of cardiovascular disease and cancer.”

“So never take supplemental iron unless a blood test shows you to have iron deficiency anemia (and if you do have it, make sure you arid your doctor work together to find the cause) or if you are pregnant, nursing, or have lost a lot of blood. If you are not in those categories, read labels of any multivitamin products you use to make sure they do not contain iron.”

Source: Eating Well For Optimum Health, Dr. Andrew Weil.

“As we all know, too much of a good thing can be detrimental. There are several reasons. The fact is that once iron enters the body, it has no way out. Most of it is recycled, not excreted or otherwise consumed…. Here’s the second catch. …iron (like copper) converts readily between the ferrous (with two electrons) and the ferric (three electrons) forms. This makes it a player in oxidation reduction reactions, useful for transmitting oxygen via our red blood cells, but also capable of acting like a free radical and oxidizing tissues, thereby damaging them.
This means that whatever amount of the mineral that isn't affixed to the hemoglobin in our blood or to other proteins for other use roams around in the body as unbound ‘free iron’ and is vulnerable to the rust-like process of free oxidation….”

“….Excess iron is implicated in other diseases too. It could accumulate to a toxic extent in our organs and tissues, including the joints, the liver, the gonads and the heart. It could feed the growth of harmful bacteria and malignant tumor cells as well as stimulate additional cancer promoting free radical activity.”

“Believe it or not, our bodies were designed to circumvent the iron dilemma entirely. Orthodox medicine and popular dietary practices, though, seem to circumvent nature. Two kinds of iron exist….. the two kinds are:

1. Heme iron. The natural, organic, biologically available form cannot build up to excess and is not vulnerable to free radical oxidation. Only 2 mg of heme iron, which comes from red meat, chicken and fish, can be absorbed by the body during a single meal, so no surplus accumulates.
2. Non-heme iron. This synthetic, inorganic form is the kind found in most iron supplements and fortified foods, including those made with ‘enriched’ flour. It usually appears on labels as ferrous gluconate, ferrous sulfate or ferrous fumarate. The body can absorb as much as 20 mg of non-heme iron at any one time, possibly leading to a higher level of accumulation that would, in turn, increase the heart disease and cancer risk.

To be safe, don’t take any kind of iron supplement …without first going to a doctor for a blood test.”

All things in moderation, is my motto these days. We have no idea what eating this way can do to our bodies 20 years from now. In fact, I hear they're telling Adkins folks to cut back on the portions of meat they're eating because of the fat.

< pet peeve>It's ATkins - ATkins not Adkins. When you dismissing something at least show enough knowledge of the subject to spell it correctly. You can always tell someone who has a strong opinion, yet has no knowledge of Atkins, yet by the fact they all spell his name the same way.< /pet peeve>

I had a charcoaled hamburger stuffed with gorgonzolla cheese and topped with cheddar, steamed broccoli and low carb Ice Cream for desert.

I hate this deprivation diet!

Look, honey, I was typing it in a hurry. I know enough about ATkins and I feel if people want to use it, fine. Just remember that there could be consequences down the line. I'm not dismissing it as something that works for some people. I think different things work for different bodies, but I still believe all things in moderation. I've been on trillions of diets over the years and found that eating less and exercising more is what works best for me and probably for most others.
