Have you ever eaten a steak from a mature dairy cow? How do you think a muscle cut from a down Holstein would grade?

How do you think a muscle cut from a down Holstein would grade? Its grade might be low and maybe just used for hamburger, but it would be fit for human consumption.
What do you think about cross contamination at the processing plant? This will be a major problem and a huge recall and many cattle (up or down) will be slaughtered and tested.

I looked at pictures of Interstate Meats processing plant in Orgeon and it looks to be a substantial facility. I look for a large hamburger recall.

well technically they're all muscle cuts...weight bearing being the toughest...like your pot roast etc.
I'd bet the loin, NY's, porterhouses, etc would be decent enough if you cooked them right.
wonder if japans ban means a flood of cheap kobe beef in the US? it might backfire on japan, if Americans get a liking to it and its more profitable to keep the kobe beef here than send it there.
