The reason supermarkets are charging these prices is because people are paying the amounts, plain and simple.
Wait for the sales, buy extra. Stock up and freeze.
Just bought some standing rib roasts at Food Lion for 8 something a pound. Into the freezer they went.
Standing Rib Roast, prime $6.77/lb - limit of two in the weeks leading up to Christmas around here.....not at Publix. Strip roast was about $1/lb more. I stocked up and did the same.
