ryder, why do you think a russet wouldn’t do for a potato salad? Years ago russets were all we had and my mother made the best potato salad using them.

My russets fall apart when I try to mix them up as a salad.
Let me know how you like it. I do like creamy potato salad but I like a chunk of potato now and then also.
