I want to record a series of interviews many hours worth. And perhaps post the content later. What sort of recording device is used in these digital days?

MP3 players record. No idea on the allowed duration. I assume plenty can be recorded with an inserted 128gig card.

If it is simple audio, any decent digital recorder will do will. I use a Sony ICD-UX560. Good to have two, one for backup.
I once had two digital recorders both going, and both failed me!

Your phone should do it just fine.

Use your phone. Most of the people that have YouTube channels just use an ordinary cell phone.

If your phone allows you insert a memory card, you can use that.

Never mind your recording device. I would focus on not repeating the same question verbatum three times. Otherwise your interviews will go on forever.

Check out
Tascam DR40X. I use it for recording my band practices and gigs. Excellent little recorder.

Depends on desired quality. Your mobile phone will work if that level of quality suits your needs.

Well, you could record on one of these babies...

then run the output of that through your transcrabulator, and play the output of that step on this little gizmo...

(This will decrease your carbon footprint -- unless your feet are made of carbon.)

Laptop, a decent USB microphone (Rode makes good and affordable ones,) and free Audacity software. Use an external SSD, record in mono, lowest bitrate, MP3 compression, and you'll get thousands of hours on a 1TB SSD.

Once you’ve made the recording, you can get free automated transcription from several online services.

Use a good quality microphone please, in a room with good acoustics and no background noise.
When you post it, no background music.
Consider consulting a professional. I'm not one but my hearing is poor.

In most major cities, you could just stand on any street corner and talk...
Then petition the local government for access to your recording...
Nothing is missed by governments at all levels...

If camera, get three or four, and set them up at different angles and distances to be able to cut from one to the other, to make it more focusing on the brain.
If you have just one angle and shoot the video straight through, it begins to feel like the subject is droning on. Changes in perspective and distance and focal range make things feel newer and more interesting, and maintain the viewer’s focus.
