Soufflés are tricky..................BUT DELICIOUS!..............
My mother had her excuses. She believed that the humidity in Virginia was one thing that caused soufflé’s to collapse... also door slamming... we would run in the house and she’d yell “Don’t slam the door, I’ve got a soufflé in the oven!” Yes, they are delicious.. probably why I remember all that so well.
