Delmonico's was the name of the restaurant in Dodge City on Gunsmoke!.........
Google says there’s lots of Delmonico’s Steakhouses across the country.
He got around a lot.................
I watched a nice video from a chef at Delmonico’s to show me how to make great sautéed scallops with garlic wine sauce. It was a great help and I haven’t messed them up since watching. Turns out I was turning them too frequently.

I hope they sort out the mess. That place was an institution.
Yum, now I want scallops. Love them like that.
I can hardly ever get ‘dry’ scallops here in Phoenix. But a Vietnamese guy I met at the fish counter told me to get big wet processed ones and put them in lemon water, change water, let soak for 1/2 hour dry on many changes of paper towel. They actually taste good, get that crust, not steamed.
If you have not read THE ALIENIEST....it is a good read and talks a great deal about the original Delmonico’s.
Oooops... The Alienist.
“Turns out I was turning them too frequently.”
Scallops should only be turned once.

Delmonico’s in New Year is also where baked Alaska was created - the delicious dessert not the creepy degenerate Internet personality.
My dad was a head waiter there in the late forties. RIP Dad. I’ll hoist a glass of Scotch in your memory.
Exactly! That was my mistake before.
Yes, they are best when dry. I can’t get them super fresh here, but manage ok with frozen that I prep carefully, as you indicated. Drying is essential.
Great minds....!
Would love to have The Dollars receipt for French Onion Soup.
I was so intent on cooking them correctly, so I watched that video several times and took good notes. I really paid attention to how brown to get them before turning. It was so good! I served over angel hair pasta with a side of sautéed zucchini and yellow squash. Heavenly, and really pretty easy! I didn’t have roasted garlic on hand so added pressed garlic just after setting the scallops aside.
The Willard’s. I hate auto correct.
No, you are the very last person who would know about turning scallops. The last time we talked about dinner, you claimed to be trapping wild game for you and the Mrs.
The Dollars? Not sure where that is, but I can try to find a recipe for you.
