I watched a nice video from a chef at Delmonico’s to show me how to make great sautéed scallops with garlic wine sauce. It was a great help and I haven’t messed them up since watching. Turns out I was turning them too frequently.

I can hardly ever get ‘dry’ scallops here in Phoenix. But a Vietnamese guy I met at the fish counter told me to get big wet processed ones and put them in lemon water, change water, let soak for 1/2 hour dry on many changes of paper towel. They actually taste good, get that crust, not steamed.

Yes, they are best when dry. I can’t get them super fresh here, but manage ok with frozen that I prep carefully, as you indicated. Drying is essential.

I was so intent on cooking them correctly, so I watched that video several times and took good notes. I really paid attention to how brown to get them before turning. It was so good! I served over angel hair pasta with a side of sautéed zucchini and yellow squash. Heavenly, and really pretty easy! I didn’t have roasted garlic on hand so added pressed garlic just after setting the scallops aside.
