Healing prayers out to you CTC. I would avoid the orange juice — it just dumps sugar onto an already overtaxed immune system. Vitamin C yes, but no sugar. If you're able, make up a batch of homemade soup.
- Get two chicken breasts and poach them, or just get a rotisserie chicken at Costco and tear off the breast meat and dice it all up.
- Get 2 boxes of Pacific chicken broth (that's 4 cups in each box). Pacific is an organic brand, but I have found it at Target.
- 2 carrots, 2 celery stalks, 1/2 large yellow onion. Chop them all up.
- And Bok Choy — get three small-medium bokchoy. You can find them in bags of three at Trader Joe's, or my local Sprouts market has them. Wash them well (grit sometimes gets down in the base) and then chop into bite-sized pieces, including the green and white parts.
- If you MUST have noodles in your chicken noodle soup, get a whole grain noodle, rice or Soba noodles. (I just leave them out.) Have them already cooked and add at the end.
It's so easy to make. Just slowly saute the Holy Trinity/mire poix (celery, carrot, onion) in a table spoon of olive oil until they are soft but not browned. Pour in the two boxes of broth and bring to a boil. Add the cooked diced chicken, lower heat to a simmer and allow to warm through. Add the chopped bok choy, cover with lid and let it steam until al-dente (it doesn't take long). Season with 1/2 - 1 teaspoon SEA SALT (amount will depend on your taste preference and whether or not you used sodium-free broth) and fresh ground black pepper. SErve. This stuff is miracle juice, but you may not be able to taste it at first if your cold is particularly bad.
Thank you for the magic chicken soup recipe. I have never had it with bok choy.
When I am sick, I find hot sour soup from our local Chinese place really helps with congestion and all that. I even made some myself and canned it so we would have it on hand.
Healing prayers for you, Cheshire and also for your aunt.
