You will not find better Southeast Asian food, especially Vietnamese, anywhere than in Fort Smith, Arkansas.
Similar experience for us when we lived in the Twin Cities Minnesota.
There was a Vietnamese small family run restaurant that had an excellent menu and their version of wings/sauce rivaled any east coast original.
They proudly spoke about how this was a generational recipe and that’s what they wanted people to experience.
Always a full restaurant so they accomplished their personal and business goal

You got that right. I used to travel a lot in the state doing projects. Once we were in central Wisconsin and the guys decided to eat at an all you can puke Chinese buffet. I knew better and stayed at the hotel. The next day we didn’t get much done because they all spent a lot of time in the can.
You have something in common with my beloved Pit Bull.
Chopper will munch some gizzards, any day, any time.
He turns his picky nose up at livers, though.
(I must admit, being a child of the South, I did eat my share of gizzards...and livers...but it seems that my G-maw cooked them a lot different than they do now.)
At one time, Kentucky Fried Chicken offered plates of gizzards.
Don't recall seeing them on the menu lately, but the last time I was in a KFC was years ago.
To each his own.
(I like pork brains with scrambled eggs, too.)
Lots of wonderful Indian, Thai, Chinese, Korean, Malaysian, etc., restaurants here—and in their home countries.
We have a town full of Chinese places because we have 1,000 students from China and Taiwan plus Asian-Americans. Only two of the places are any good although the lame buffet place has a separate Chinese menu that is popular.
Andrew Zimmern is one of my favorites. His Bizzare Foods is a scream. Eating really nasty ‘treats’ from around the world.
He hunts, fishes, gathers at locations he films. Local cuisine from around the nation and beyond.
Really seems like a down to earth guy.
Yes. It’s not better in Silicon Valley but not worse. Both good.
A friend and coworker in NYC was Chinese. (I stood up for him for his citizenship) We would often go to Chinatown to eat. At every restaurant he would take me to, I would be the ONLY round-eye in the place. None of the menus or paper strips on the walls was ever in English. What we occidentals called "Chinese" food he would call, "Jewish food."
Outside of Fun City, good pizza, bagels, Chinese food and cheesecake do not exist. The only lobster I get is swimming in the tank at Kroger
PS...in spite of his instructions, I never got the hang of chop sticks.I learned early on that when we were going out to eat, I should bring my own fork. lol
Tip: many Chinese restaurants have a separate, Chinese-language menu with completely different items on it.
My problem with downtown Chinese restaurants are that they are FILTHY. Same was true when I had a house in NJ - there was a place called Wonder that got raves reviews. When I went in, the fishbowl had dead fish at the bottom of a filthy tank. So I do tend to prefer the Jewish-Chinese restaurants of midtown and uptown. Sue me!!! Now, I stick to other cuisines until somebody points me in the right direction.

On a side note, I miss Kowloon Station in Milpitas (also known as Spy Central, I think the FBI/CIA/DIA or some such shut them down).
And Fung Lum in Campbell, which it its own odd way was a victim of 9/11. The owner expanded his business by opening another restaurant, which would have been a rip roaring success, at SFO about a week before the attack.

I tried the hot and sour soup at one place out there. It was like dishwater. I know someone who runs a Mongolian BBQ. I told them they should travel there and teach them how to make it.
Too bad - young couple but small town. Where your best option for lunch is a Taco John’s or Sonic if you want to pay the tip. After that, it’s a toss-up between McD and a Casey’s.
NOBODY went to Chi-Chi's for the food (ok, maybe the salsa) but for those gallon goblets of margaritas and the giant fake hacienda bar area with the overstuffed couches.
