Same as the appeal of high wire acts. Except, unlike bulls, wires don’t actively try to kill you.

With high wire, the audience hopes the aerialist makes it safely to the other end.

In a bullfight, bulls are killed and participants injured; the audience wants and expects both. BTW, with Spain inviting hostile African Muslims to come invade it, I have no desire to go there.

Meanwhile, bison aren’t house pets. They are a source of steak.
