“Processed meat” is loaded with preservatives such as sodium nitrate and sodium nitrite. I believe that these are the primary culprits. I only eat “unprocessed/uncured” meats and mostly organic or non-GMO foods (NO preservatives in anything). My health is much better and the food allergies that I developed in my 40s are greatly diminished.
You can get bacon without nitrates. It just spoils faster.
Avoiding nitrates here also - I look for uncured.

Thank you for reminding me I need to go to my local Amish store, processed meats galore, lol. I just found out the vitamin D3(cholecalciferol) the doctor has been giving me is THE main ingredient in mouse/rat poison, go figure, lol.
