You can stuff them with any cheese you like but I prefer Brie. I’ve had them with Pimento cheese also and they were damn tasty. I cut the stem end off, get as much of the seed out as I can. Stuff them and then put a small piece of bacon over the top and then wrap with bacon using a tooth pick through both. I cook them standing up in a plate with holes in it just big enough to keep them from falling over.
Thank you .. I’ll be making this and will try the Brie first as it’s one of my favorites. I’m the only one in my family that eats jalapeños, so more for me!
