Gack!!! What’s that green stuff doing ruining the gorgeous, perfectly well done eggs? And only two slices of bacon? Come on, now!
Why would people eat them for centuries if they weren’t?
That’s a beautiful picture of bacon, but the eggs need a little crispy-ness around the edges.
Might as well eat them raw if they are cooked like that. Scrambled with green onions, jalapeno and basturma with some fresh salsa on top and a splash of soy sauce and vinegar—yum.

I stopped eating margarine years ago. It may in some way be a tiny bit better for you, but I just don’t like the taste.
Only butter for me for about the last 30 years.

A lot of the older margarines were hydrogenated. Butter is much better for you.
I never heard of Basturma until today, when you introduced the topic. Thanks for that. I see it’s some sort of highly spiced, dry-cured meat. When I hear that description, I think of Beef Jerky. Is that what this tastes like?
I just bought some premium bacon, ($7 lb.), but I can still enjoy cheaper pig. I LOVE the crispy edged eggs cooked in bacon grease.

Sadly, this is why people are so unhealthy, because we eat a bunch of garbage that never existed until the 20th Century and spurned traditional food as “unhealthy”, because guys in lab coats said so.
The media just did a coordinated hit piece on Coconut Oil as being bad for you, just like ALL saturated fat. Then they said to eat things like Canola oil and other refined vegetable oils instead.
Then when you get heart disease, take some Statins, because that’s what the doctors say!
Every time the USDA has revised dietary recommendations people have just gotten exponentially sicker.
My attitude is, if they didn’t know what the food was in 1900, you probably shouldn’t eat it.
If you mean the chalaza, you can pick it out. Also mix your eggs very well so the whites are blended in.
My chickens thank you. As does the rat snake who’s been trying unsuccessfully to help with my evening chores.
