Hellmann's mayonnaise America's best-selling condiment

Ingredients

1 egg yolk*
1/2 teaspoon fine salt
1/2 teaspoon dry mustard
2 pinches sugar
2 teaspoons fresh squeezed lemon juice
1 tablespoon white wine vinegar
1 cup oil, safflower or corn

Directions

In a glass bowl, whisk together egg yolk and dry ingredients. Combine lemon juice and vinegar in a separate bowl then thoroughly whisk half into the yolk mixture. Start whisking briskly, then start adding the oil a few drops at a time until the liquid seems to thicken and lighten a bit, (which means you’ve got an emulsion on your hands). Once you reach that point you can relax your arm a little (but just a little) and increase the oil flow to a constant (albeit thin) stream. Once half of the oil is in add the rest of the lemon juice mixture.

Continue whisking until all of the oil is incorporated. Leave at room temperature for 1 to 2 hours then refrigerate for up to 1 week.

Mayo - cheap white bread, homegrown tomato sliced thick, slathering of mayo, ahhhhh heaven.

I think the figures for the size of the mayonnaise business may be as high as they are because mayo is expensive!

That's why I buy the cheaper store brand mayo. Tastes the same.

Do you make it in 30 ounce batches instead of 32 ounce, like Hellmans and Kraft started doing?

Cereal, canned tuna, toilet paper, coffee, sugar, and now mayo.

Changing gears for a moment..but since the article also mentioned ketchup....

As a kid. like all..I put ketchup on everything...the Heinz bottle is one of my earliest memories....I think I was about 13 or so,,and away at camp for the summer, when I saw my first bottle of Hunt's CATSUP..man..I was soooo confused...

anyone else remember??

Mayo with some dill pickles in it (tartar sauce) is what I love on French Fries...Absolutely cannot stand ketchup!

My favorite mayonnaise movie reference was in “Undercover Brother”. As part of a plan to infilitrate and foil the plans of “the Man”, Undercover Brother was hanging out with Denise Richards and eating mayonnaise sandwiches.

some things are just the best brands and Hellman’s is one of them...Kraft is ok...Best Foods is Hellmans...Dukes in a pinch

it’s like Ketchup...it’s Heinz or Del Monte..Hunts as a back option

Peanut butter..mass market variety...you go for off brands and don’t use Peter Pan, Skippy, JIF and you might regret it

cereals...same thing...discount brands are not as good

cold cuts and hot dogs same thing

soft drinks same issue

I know this having grown up to where when I opened the pantry or fridge and saw name brand I knew Dad and not Mother had been shopping. My mom reused paper towels...over and over. She came up hard.

Right, on the West Coast it was Best Foods. I can still remember as a kid how funny it was visiting New York for the first time and seeing a Hellman's TV commercial - it was identical to the Best Food's Mayonnaise commercials I'd heard all my life, except they substituted the name Hellman's for Best Foods.

Heinz Ketchup is a distant third with $278.6 million in sales...

I stopped using Heinz Ketchup in order to stop subsidizing Teresa Heinz and John Kerry. When Burger King gives out Heinz packets, I give them back and say, "I don't like this brand."

My wife will not eat red beans and rice without a big spoonful or two of mayo mixed in. Says it cuts down on the heat of the cayenne pepper in the beans.
