I would like it to come with XP. Why? Would you like to hear about Vista from someone who actually uses it?

Install your OSes oldest to newest. Vista uses a new boot loader that XP won't be able to handle.

"My question is will I even be able to buy a legal copy of XP after Vista consumer version comes out? If so, for how long?"
You'll still be able to purchase XP for the foreseeable future. Also, check out OEM versions of XP Pro or XP Home on newegg or whatever. It's a lot cheaper, and when I build a new rig, I always use OEM.
