I don't know how much this will help you, and considering I am only a marginal baker at best, and not a confectioner at all..
As you would expect, I have a heavy duty KitchAid mixer, and a complete set of optional attachments, including all of the pasta rollers and sausage, grinder-filler.. With few exceptions, of all of those features, I have only used most of them less than a half dozen times, except the following which I use frequently;
C-Dough Hook Coated
Flat Beater Coated
Wire Whip
a 2nd Mixing Bowl with Handle
