Spinach, Grapefruit and Almond Salad
This recipe serves: 6
Preparation time : 15 minutes
Cooking time : 10 minutes
Ingredients
For the vinaigrette:
1 tablespoon soy sauce
2 tablespoons fresh lime juice
1 tablespoon finely chopped shallots
1/3 cup olive oil
salt to taste
freshly ground black pepper
For the salad:
1/2 cup slivered almonds
4 cups spinach, cleaned and torn into bite-size pieces
1 grapefruit, peeled and sectioned
Cooking Instructions
For the vinaigrette:
1. Place all the ingredients in a container with a tight-fitting lid. Shake well.
2. Add the salt and pepper to taste.
For the salad:
1. Preheat the oven to 350°F.
2. Spread the almonds on a baking sheet and roast in the oven until lightly browned, about 10 minutes.
3. Place the spinach in a bowl and toss with the vinaigrette.
4. Transfer the dressed spinach leaves to a serving plate. Arrange the grapefruit sections on top and sprinkle with the almonds.
To roast whole, slivered, chopped or sliced almonds: Spread in an ungreased baking pan. Place in a 350°F oven and bake 10 minutes or until golden brown and fragrant; stir once or twice to ensure even browning. Note that almonds will continue to roast slightly after removing from oven.

Ingredients
1 teaspoon olive oil
1/3 cup finely chopped onions
1/3 cup finely chopped green or red bell peppers
1/3 cup finely chopped zucchini
1/3 cup finely chopped celery
1/3 cup peeled and finely chopped eggplant
1/3 cup chopped tomatoes
1 teaspoon chopped, fresh basil (dried is fine)
salt to taste
freshly ground black pepper
1 teaspoon red wine vinegar
1/3 teaspoon sugar
Cooking Instructions
1. Heat the oil in a skillet over medium heat. Add the onions and peppers. Cook for 2 minutes.
2. Add the zucchini, celery and eggplant. Cook 2 minutes more.
3. Add the tomatoes, basil, salt and pepper. Simmer about 20 minutes, uncovered. Let cool.
4. Add the vinegar and sugar. Adjust the salt and pepper to taste.
5. Serve cold as a dip with pita bread, crackers or tortilla chips.
Atkins Broiled Orange-Chili Chicken Breasts
Servings: 4
Prep time: 0:10:00
Bake/Cook time: 0:15:00

1/4 cup orange juice
2 teaspoons chopped garlic
1 tablespoon extra virgin olive oil
1 tablespoon chili powder
1 teaspoon granular sugar substitute
1 teaspoon grated orange rind
1/4 teaspoon cayenne pepper (optional)
4 boneless chicken breast halves, with skin (about 2 pounds)
salt and freshly ground black pepper
In a large resealable plastic bag, mix orange juice, garlic, oil, chili powder, sugar substitute, orange rind and cayenne pepper. Add chicken breasts; toss to coat. Refrigerate 6 to 8 hours, or overnight Heat broiler. Season chicken with salt and pepper. Position broiler rack 6 inches from heat source and broil chicken 12 to 15 minutes, turning halfway through cooking time, just until cooked through.

1 (8-ounce) container mascarpone, slightly softened
1 tablespoon granular sugar substitute
4 small mint sprigs and strips of lemon peel, for garnish
In the large bowl of an electric mixer, beat heavy cream on medium-high to soft peaks. Reduce speed to medium; add mascarpone and sugar substitute, beating just until smooth, 15 to 30 seconds. Divide and spoon the cream mixture into four parfait cups. Garnish with mint sprigs and lemon peel, if desired.

Day 33 - 8 pounds lost. I now weigh LESS than what my driver's license says.
I'm looking to start something with weights, to stop muscle loss and improve general strength and fitness. (And impress the ladies once the top layer of fat is removed). Any advice on a men's program for absolute beginners?
Pickles are good for salt cravings, too. They only have 5 calories.

Never was much of a bar type person. Live in Burien, now. I hit the Keg, or Azteca ever now and then.

My 90-95 sugar level is without exercising for the time being. I'm just now starting to feel somewhat better and getting my energy level back after it spiked so high about 3 weeks ago...now, if my vision will stablize, I'll be all set...LOL...eye doctor has me in contacts and reading glasses for the time being...I'll have to have a full eye exam in another couple of weeks to see if there was any permanent damage done...hubby is hoping I can go back to my bifocals because he's tired of crawling around on the floor with a flash light and magnifying glass looking for dropped contacts...LOL
Pickles are great. I always have at least 2 jars in the fridge. They are full of flavor and hardly any calories.

I cut fat and some carbs, but for some reason I can't give up popcorn. I air-pop it - the microwave version has too much salt for even me - and add garlic powder and onion powder to it.
I adore pickles. I can eat a jar in three days.

No, it's something from an African plant. From what I've read, the bushmen would eat the plant when out hunting because they knew they wouldn't be eating for hours. It kept them from feeling hungry.
The Anna Nicole stuff is probably just garbage.
