Struffoli:

Ingredients

3 1/2 cups all purpose flour
6 eggs ,plus 1 egg yolk
Grated zest of 1lemon and 1orange
1/2 teaspoon salt
1 tablespoon limoncello or amaretto
4 cups canola oil, for frying
2 cups honey
juice and zest of 1 lemon

In a mixing bowl ,combine the flour ,egg, yolk ,zests ,salt, and limoncello (I use almond extract instead) and mix well to form a a firm dough ,8 to 10 minuites. Refigerate for 30 minutes . When the dough has rested ,remove from fridge and cut golf ball size balls .Roll each golf ball into a 1/2 -inch -thick dowel and cut each dowel into 1/2 inch pieces . Roll each piece between palms into a ball . Repeat with the remaining dough. (When rolling the dough it is easier if your hands are lightly oiled.)

Heat the oil in a 12- to 14 -inch skillet with at least 3 inch sides -inch sides to 375 degrees F. Drop balls in to cover

When all the pieces are fried, combine the honey, lemon juice. Set over medium heat and heat until the mixture boils.

Pour the melted honey mixture over the Struffoli and stir to coat. Pile high on a platter and serve.

You can garnish with tiny sprinkles and candied cherries.

I make mine in the shape of a christmas tree and put red and green cheries around like ornaments.
