Horses, and their ilk, (elk?), don't like to be stared at.
Predators such as we, with our eyes in the front, make them nervous.
Just as Lulubelle is a pack animal, (you did teach her to carry that six-pack cooler, didn't you?), horses are herd animals.
When you deal with an animal based on its psychology, both you and it can be more comfortable.
If she is interested, I believe "The Horse Whisperer" delves into this. Perhaps knowing how the animals think may alleviate her fear. Horse don't really try to stare you down, they're just trying to evaluate your threat level.
