I often try to sharpen the knives we use but our stones are not the greatest anymore and some of the knives don't take an edge easily. If you locate a set or separate knives they would be used by my crew, I think I would monitor there use to maintain the quality as long as possible.

Boy if those aren't the keywords to grab a knife aficionado. This man knew who he was writing to :~D

Heh... quite. But chefs (and mess gunnies) do get kinda funny about their knives. That, and their frying pans. Don't ever fool around with his knives or his pans. :-)

And that's a good thing.
